Ingredients
- 1 cup dried lentils (green or brown)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 6 cups vegetable broth or water
- 2 tablespoons olive oil
- Salt and pepper to taste
- fresh parsley for garnish (optional)
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.
- Add the minced garlic, diced carrots, and celery to the pot. Cook for another 5 minutes until the vegetables start to soften.
