Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.
Add diced chicken, salt, and pepper. Cook 6–8 minutes until chicken is browned and cooked through.
Add remaining butter, garlic, honey, and vinegar. Stir to coat chicken.
Lower heat to medium and simmer 3–4 minutes until sauce thickens slightly.
Remove from heat and allow chicken to rest for a few minutes.
Sprinkle with chopped fresh parsley and serve.
Notes
Double the sauce for more drizzle if serving over rice. Leftovers taste great the next day and freeze well!
