Ingredients
  

  • 1 lb salmon fillet, cut into bite-sized pieces
  • ¼ cup teriyaki sauce Adjust based on your taste preference for sweetness.
  • 2 cups jasmine rice
  • 4 cups water (for cooking rice)
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 red bell pepper, sliced
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions
 

  • Marinate the salmon by combining it with teriyaki sauce in a mixing bowl and letting it sit for about 10 minutes.
  • Rinse the jasmine rice under cold water until the water runs clear, then cook the rice according to your appliance instructions using 2 cups of rice and 4 cups of water.
  • Preheat the air fryer to 400°F (200°C).
  • Place the marinated salmon bites in the air fryer basket in a single layer and cook for about 8-10 minutes, shaking the basket halfway through.
  • While the salmon is cooking, heat sesame oil in a skillet over medium heat. Add the broccoli, carrot, and bell pepper, and stir-fry for about 3-4 minutes until the vegetables are tender but still crisp, then add soy sauce and toss to combine.
  • Once the rice is cooked, fluff it with a fork.
  • To serve, place a scoop of rice in each serving bowl, top with the sautéed vegetables, and add the air-fried teriyaki salmon bites. Garnish with sesame seeds and sliced green onions.

Notes

You can substitute the vegetables based on your preference or what you have on hand.
Adjust the amount of teriyaki sauce based on your taste preference for sweetness.
For added heat, consider adding sriracha or red pepper flakes.
