Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups egg noodles, uncooked
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 1 cup water

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef along with the chopped onion and minced garlic, stirring until the meat is cooked through and the onion is translucent. Drain any excess grease.
  • Add the diced tomatoes, tomato sauce, kidney beans, dried oregano, dried basil, salt, and pepper to the skillet. Stir well and let the mixture simmer for about 5 minutes.
  • In a large pot, bring 4 cups of water to a boil. Once boiling, add the egg noodles and cook according to package instructions until al dente. Drain the noodles and set aside.
  • In a large mixing bowl, combine the meat mixture with the cooked egg noodles. Mix well to incorporate all the ingredients.
  • Transfer the mixture to a greased casserole dish, spreading it out evenly.
  • Sprinkle the shredded cheddar cheese on top of the casserole.
  • Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes.
  • After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let it sit for a few minutes before serving.

Notes

Feel free to customize your casserole by adding vegetables like bell peppers or mushrooms. This dish can be made ahead of time and stored in the refrigerator for up to two days or frozen for longer storage. To reheat, simply bake until warmed through.
