Ingredients
  

  • 200 g feta cheese Block of feta cheese
  • 300 g cherry tomatoes
  • 300 g uncooked pasta Penne or bowtie
  • 60 ml olive oil
  • 4 cloves garlic Minced garlic
  • 1 teaspoon red pepper flakes Optional
  • to taste salt
  • to taste pepper
  • fresh basil leaves For garnish
  • grated Parmesan cheese For serving, optional

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a baking dish, add the cherry tomatoes and drizzle with olive oil. Place the block of feta cheese in the center of the tomatoes.
  • Sprinkle minced garlic, red pepper flakes, salt, and pepper over the tomatoes and feta.
  • Bake in the preheated oven for about 30 minutes, or until the tomatoes are bursting and the feta is soft.
  • While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Once the feta and tomatoes are done baking, remove the dish from the oven. Use a fork to mash the feta cheese into the tomatoes, creating a creamy sauce.
  • Add the cooked pasta directly into the baking dish and mix well until the pasta is fully coated with the sauce.
  • Serve immediately, garnished with fresh basil leaves and grated Parmesan cheese if desired.

Notes

Feel free to add vegetables like spinach or bell peppers for added nutrition.
This dish can be easily customized with different herbs or spices to suit your taste.
Leftovers can be stored in the refrigerator for up to 3 days. Reheat gently before serving.
