- 2 medium ripe bananas About 1 cup mashed.
- 1 cup rolled oats
- ½ cup almond butter Or any nut butter.
- ¼ cup honey Or maple syrup.
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper if desired.
In a mixing bowl, mash the ripe bananas with a fork until smooth.
Stir in the almond butter, honey, and vanilla extract until well combined.
Add the rolled oats and baking soda, and mix until all ingredients are incorporated.
Using a cookie scoop or spoon, drop rounded tablespoons of cookie dough onto the prepared baking sheet, leaving some space between each cookie.
Bake for 10-12 minutes, or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Ensure your bananas are very ripe for the best flavor and sweetness. You can add chocolate chips or nuts for extra texture if desired. Store any leftover cookies in an airtight container at room temperature for up to 3 days.
