Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • ¼ cup soy sauce
  • 2 tablespoons sriracha sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ¼ cup mayonnaise
  • 1 teaspoon sriracha sauce (for the sauce)
  • ½ teaspoon lime juice
  • Fresh cilantro (for garnish)

Instructions
 

  • Cut the chicken breasts into bite-sized cubes and place them in a large mixing bowl.
  • In a separate bowl, whisk together soy sauce, sriracha, honey, olive oil, rice vinegar, garlic, and ginger to create the marinade.
  • Pour the marinade over the chicken cubes, ensuring they are well-coated. Cover and let marinate for at least 10 minutes.
  • Soak wooden skewers in water for 10 minutes to prevent burning (if using).
  • Preheat the grill or grill pan over medium-high heat.
  • Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  • Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.
  • While the chicken is grilling, make the Bang Bang sauce by combining mayonnaise, sriracha, and lime juice in a small bowl. Whisk until smooth and set aside.
  • Once the skewers are cooked, remove them from the grill and let them rest for a couple of minutes.
  • Drizzle the Bang Bang sauce over the skewers and garnish with fresh cilantro before serving.

Notes

You can adjust the spiciness of the sauce by increasing or decreasing the amount of sriracha used.
These skewers pair well with rice or a fresh salad for a complete meal.
For a vegetarian option, feel free to substitute the chicken with firm tofu or vegetable skewers.
