- 4 pieces boneless, skinless chicken breasts About 1.5 lbs.
- 1 cup BBQ sauce Your choice of flavor.
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups broccoli florets
- 2 cups baby carrots
- 1 piece red bell pepper Sliced.
- 1 piece yellow bell pepper Sliced.
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine olive oil, garlic powder, onion powder, paprika, salt, and black pepper to create a spice rub.
Pat the chicken breasts dry with paper towels, then rub the spice mixture all over the chicken.
On the sheet pan, arrange the seasoned chicken breasts in the center. Surround them with the broccoli florets, baby carrots, sliced red and yellow bell peppers.
Drizzle the BBQ sauce evenly over the chicken and vegetables, ensuring everything is well-coated.
Place the sheet pan in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
Remove the pan from the oven and let it rest for a few minutes before serving.
Feel free to substitute the vegetables with any of your favorites, such as zucchini or asparagus. You can add extra BBQ sauce on the chicken after baking if you desire more flavor. This dish pairs well with rice or crusty bread for a complete meal.
