Ingredients
  

  • 4 large bell peppers Any color.
  • 2 cups cooked shredded chicken
  • ½ cup buffalo wing sauce Adjust based on spice preference.
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese Softened.
  • ¼ cup chopped green onions
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper
  • olive oil For drizzling.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the outside of the peppers with olive oil and place them cut-side up in a baking dish.
  • In a mixing bowl, combine the shredded chicken, buffalo wing sauce, shredded cheddar cheese, cream cheese, chopped green onions, garlic powder, salt, and pepper. Mix until well combined.
  • Carefully stuff the mixture into each bell pepper, pressing down gently to pack the filling.
  • Cover the baking dish with aluminum foil and bake for 20 minutes.
  • After 20 minutes, remove the foil and bake for an additional 5 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.
  • Remove from the oven and let cool for a few minutes before serving.

Notes

Feel free to adjust the level of buffalo sauce based on your spice preference.
You can substitute the chicken with shredded rotisserie chicken for a quicker option.
Serve with a side of celery sticks and blue cheese or ranch dressing for dipping. Enjoy!
