- 4 large bell peppers Any color.
- 2 cups cooked shredded chicken
- ½ cup buffalo wing sauce Adjust based on spice preference.
- 1 cup shredded cheddar cheese
- ½ cup cream cheese Softened.
- ¼ cup chopped green onions
- 1 teaspoon garlic powder
- to taste salt
- to taste pepper
- olive oil For drizzling.
Preheat your oven to 375°F (190°C).
Cut the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the outside of the peppers with olive oil and place them cut-side up in a baking dish.
In a mixing bowl, combine the shredded chicken, buffalo wing sauce, shredded cheddar cheese, cream cheese, chopped green onions, garlic powder, salt, and pepper. Mix until well combined.
Carefully stuff the mixture into each bell pepper, pressing down gently to pack the filling.
Cover the baking dish with aluminum foil and bake for 20 minutes.
After 20 minutes, remove the foil and bake for an additional 5 minutes, or until the peppers are tender and the cheese is bubbly and slightly golden.
Remove from the oven and let cool for a few minutes before serving.
Feel free to adjust the level of buffalo sauce based on your spice preference. You can substitute the chicken with shredded rotisserie chicken for a quicker option. Serve with a side of celery sticks and blue cheese or ranch dressing for dipping. Enjoy!
