Ingredients
  

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese
  • 1 cup cooked black beans canned or homemade
  • 1 cup cooked white rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • ½ cup salsa
  • ½ cup sour cream
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • fresh cilantro optional, for garnish

Instructions
 

  • Heat the olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until softened (about 3-4 minutes).
  • Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and completely cooked through, about 5-7 minutes. Drain any excess fat.
  • Once the beef is cooked, stir in the taco seasoning, black beans, and cooked rice. Mix well and cook for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.
  • Warm the flour tortillas in a separate skillet for about 30 seconds on each side or in the microwave for 10 seconds until soft and pliable.
  • Place a generous amount of the beef mixture in the center of each tortilla. Sprinkle shredded cheddar cheese over the top.
  • Fold in the sides of the tortilla and then roll it up tightly from the bottom. Repeat with all tortillas.
  • Optional: If desired, you can toast the burritos in the skillet for an additional 2-3 minutes on each side until crispy and golden.
  • Serve the burritos with a dollop of salsa and sour cream on the side. Garnish with fresh cilantro if desired.

Notes

You can customize this recipe by adding vegetables like diced bell peppers or corn for extra flavor and nutrition.
For a spicier kick, consider adding jalapeños to the beef mixture or using a spicy salsa.
Leftover burritos can be wrapped in foil and stored in the refrigerator for up to 2 days but are best enjoyed fresh.
