Heat the olive oil in a skillet over medium heat. Once hot, add the chicken mixture to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mixture is heated through and the cheeses have melted.
While the chicken is cooking, prepare the tortillas. Lay each tortilla flat on a clean surface.
Distribute the cooked chicken mixture evenly among the tortillas. Top each with fresh spinach, diced tomatoes, and sliced bell peppers.
Carefully wrap each tortilla, folding in the sides and rolling it tightly from the bottom to the top. If desired, wrap each in aluminum foil or parchment paper to hold the shape.
Optional: Place the wraps back in the skillet for 2-3 minutes on each side, until they're golden and crispy, adding extra flavor.
Slice in half and serve immediately.
