- 1 pound ground beef
- 1 cup uncooked rice white or brown
- 2 cups beef broth
- 1 can (15 ounces) diced tomatoes undrained
- 1 cup frozen mixed vegetables peas, corn, carrots
- 2 cups shredded cheddar cheese
- 1 small onion diced
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Drain any excess fat.
Stir in the uncooked rice, beef broth, diced tomatoes (with juices), mixed vegetables, oregano, salt, and black pepper. Bring the mixture to a simmer and cook for about 5 minutes, stirring occasionally.
Transfer the beef and rice mixture to a 9x13 inch baking dish, spreading it evenly. Sprinkle 1 cup of shredded cheddar cheese over the top.
