Ingredients
  

  • 8 ounces elbow macaroni
  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup beef broth
  • 1 cup cheddar cheese, shredded
  • ½ cup mozzarella cheese, shredded
  • Fresh parsley for garnish (optional)

Instructions
 

  • In a large pot, bring water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent (about 2-3 minutes).
  • Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it up with the wooden spoon (about 5-7 minutes). Drain any excess fat.
  • Stir in the diced tomatoes (with their juice), Italian seasoning, salt, black pepper, and beef broth. Bring the mixture to a simmer.
  • Add the drained macaroni to the skillet and stir well to combine. Reduce the heat to low and let it simmer for about 5 minutes.
  • Remove the skillet from heat and stir in the cheddar cheese until melted. Top with mozzarella cheese and cover to let it melt, about 2-3 minutes.
  • Spoon pasta onto plates and garnish with fresh parsley if desired.

Notes

For extra creaminess, you can add a splash of heavy cream or a few tablespoons of cream cheese into the cheese mix.
This dish can be customized with your favorite pasta shape or additional vegetables like bell peppers or spinach.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and can be reheated on the stovetop or in the microwave.
