- 2 medium chicken breasts about 1 lb or 450g
- 2 ripe avocados
- 4 whole wheat tortillas
- 1 cup baby spinach
- 1 medium tomato diced
- ½ cucumber sliced
- ¼ cup Greek yogurt
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
- chopped cilantro or parsley for garnish, optional
Season the chicken breasts with salt, pepper, and olive oil. Preheat the grill or grill pan over medium-high heat.
Grill the chicken for about 5-6 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the heat and let it rest for a few minutes before slicing.
