Ingredients
  

  • 12 ounces spaghetti
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 ounces) Ro-Tel diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

  • 1 cup shredded cheddar cheese
  • fresh cilantro for garnish (optional)

Instructions
 

  • Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-5 minutes until soft and translucent.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the chicken breasts to the skillet and season with chili powder, cumin, salt, and pepper. Cook for about 5-7 minutes per side, or until the chicken is fully cooked and golden-brown.
  • Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet.
  • Stir in the Ro-Tel tomatoes and chicken broth. Simmer for about 5 minutes to allow the flavors to meld.
  • Add the cooked spaghetti to the skillet and toss to combine everything evenly until the spaghetti is coated in the sauce.
  • Remove from heat and sprinkle the shredded cheddar cheese on top. Cover the skillet for a few minutes to allow the cheese to melt.
  • Serve hot, garnished with fresh cilantro if desired.

Notes

You can customize this recipe by adding vegetables like bell peppers or corn.
For a spicier dish, use the hot version of Ro-Tel tomatoes.
