Ingredients
  

  • 8 slices white bread
  • ¼ cup sugar
  • 1 tablespoon ground cinnamon
  • 2 ounces cream cheese, softened
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter for cooking
  • powdered sugar for dusting, optional

Instructions
 

  • In a small bowl, mix together the sugar and ground cinnamon. In another bowl, beat the cream cheese until smooth.
  • Trim the crusts off each slice of bread and use a rolling pin to flatten each slice to about ¼ inch thick.
  • Spread a thin layer of the cream cheese mixture on one side of each flattened slice and sprinkle a generous amount of the cinnamon sugar mixture on top.
  • Roll up each slice tightly, starting from one end.
  • In a separate mixing bowl, whisk together the eggs, milk, and vanilla extract until well combined.
  • Heat a frying pan or griddle over medium heat and add butter, ensuring it coats the surface.
  • Dip each roll-up in the egg mixture, letting any excess drip off, and place in the heated pan. Cook until golden brown on all sides, approximately 2-3 minutes per side.
  • Once cooked, remove from the pan and place on a paper towel to drain excess oil. Dust with powdered sugar before serving, if desired.

Notes

You can add chopped nuts or chocolate chips to the filling for extra flavor.
Serve with maple syrup or fresh fruit for a complete breakfast.
These roll-ups can be made ahead and reheated for convenience.
