Ingredients
  

  • 3 large eggs
  • 3 tablespoons cream cheese or cottage cheese
  • ½ teaspoon baking powder
  • 1 pinch salt
  • optional herbs or spices e.g., garlic powder or Italian seasoning

Instructions
 

  • Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, separate the egg whites from the yolks. Ensure no yolk is mixed with the whites.
  • In a separate bowl, blend the egg yolks with the cream cheese until smooth.
  • Add in the baking powder and a pinch of salt to the egg yolk mixture. Mix well to combine.
  • In another bowl, beat the egg whites using an electric mixer or whisk until stiff peaks form, about 3-5 minutes.
  • Gently fold the egg white mixture into the egg yolk mixture using a spatula, being careful not to deflate the egg whites.
  • If desired, add any optional herbs or spices to the batter and mix gently.
  • Drop spoonfuls of the mixture onto the prepared baking sheet, forming about 6 rounds.
  • Bake in the preheated oven for 20-25 minutes or until the tops are golden and set.
  • Remove from the oven and let cool slightly before serving.

Notes

Ensure that the mixing bowls and utensils are clean and free of any grease for better volume in egg whites.
Cloud bread can be stored in an airtight container in the fridge for up to 3 days.
You can enjoy cloud bread plain, with spreads, or as a sandwich base.
