Ingredients
  

  • 1 cup fresh or frozen cranberries If frozen, thawed.
  • 1 cup mini marshmallows
  • 1 cup crushed pineapple Drained.
  • ½ cup pecans or walnuts, chopped Optional.
  • ¼ cup sugar Adjust based on tartness of cranberries.
  • ½ teaspoon vanilla extract
  • 1 cup whipped topping Can be low-fat or Greek yogurt for a lighter version.

Instructions
 

  • Rinse the fresh cranberries under cold water if using fresh. If using frozen cranberries, ensure they are fully thawed.
  • In a mixing bowl, combine the cranberries, sugar, and vanilla extract. Stir gently and let it sit for about 5 minutes to allow the cranberries to release some juices.
  • Add the crushed pineapple (drained) to the cranberry mixture and mix well.
  • Fold in the mini marshmallows and chopped nuts (if using) into the cranberry mixture.
  • Gently fold in the whipped topping until everything is well combined.
  • Transfer the mixture to your serving dish and refrigerate for at least 1 hour before serving to enhance the flavors.

Notes

You can adjust the sugar based on your preference for sweetness.
For a lighter version, you can use low-fat whipped topping or Greek yogurt.
This dish can be made a day ahead and stored in the refrigerator; the flavors will meld beautifully overnight.
