- 12 ounces pasta preferably fettuccine or penne.
- 8 ounces bacon chopped.
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic minced.
- ½ teaspoon black pepper
- ¼ teaspoon salt or to taste.
- 2 tablespoons olive oil
- ¼ cup fresh parsley chopped (for garnish).
Begin by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta in a colander and set aside.
In a skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and place it on a plate lined with paper towels to drain excess grease.
In the same skillet, add the olive oil. Then, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
Lower the heat and pour in the heavy cream. Stir well and let it simmer for a couple of minutes until it thickens slightly.
Gradually add the grated Parmesan cheese, stirring continuously until melted and smooth. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
Add the cooked pasta and crispy bacon to the skillet. Toss everything together to combine and coat the pasta with the creamy sauce. Season with black pepper and salt according to your taste.
Remove from heat, garnish with chopped parsley, and serve immediately.
