Ingredients
  

  • 12 oz tortellini fresh or frozen
  • 2 cups chicken breast diced
  • 2 cups broccoli florets
  • 4 cloves garlic minced
  • 1 cup heavy cream for a lighter version, substitute half-and-half
  • 1 cup grated Parmesan cheese plus additional for serving if desired
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • to taste fresh parsley chopped, for garnish

Instructions
 

  • In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions. About 2-3 minutes before the tortellini is finished cooking, add the broccoli florets to the pot. Drain and set aside when done.
  • In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, around 5-7 minutes.
  • Add the minced garlic to the skillet and sauté for 1 minute until fragrant.
  • Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese and let it simmer for 2-3 minutes, until the sauce thickens slightly.
  • Add the cooked tortellini and broccoli to the skillet, tossing everything together until well coated in the creamy sauce. Cook for an additional 2 minutes to heat through.
  • Serve garnished with fresh parsley and additional Parmesan if desired.

Notes

For a lighter version, you can substitute half-and-half for heavy cream.
You can also add other vegetables like spinach or bell peppers for extra nutrition.
