- 4 pieces boneless, skinless chicken breasts about 1.5 pounds
- 1 tablespoon olive oil
- 1 packet ranch seasoning mix (1 oz)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup shredded cheese cheddar or mozzarella
- to taste salt
- to taste pepper
- for garnish fresh parsley
Season the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the ranch seasoning mix and stir into the remaining oil and juices from cooking the chicken.
Gradually pour in the heavy cream and chicken broth while stirring to combine. Bring the mixture to a simmer.
Return the chicken to the skillet, and spoon some of the sauce over the chicken. Allow it to simmer for an additional 10-15 minutes, until the sauce thickens slightly.
Before serving, sprinkle the shredded cheese over the chicken and cover the skillet for a minute or two until the cheese is melted.
Serve hot, garnished with fresh parsley.
This dish pairs well with rice, mashed potatoes, or a side salad. You can easily customize the ranch flavor by adding your favorite herbs or spices. If you prefer a lighter version, consider using half-and-half instead of heavy cream.
