Ingredients
  

  • 8 ounces penne pasta
  • 12 ounces smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions
 

  • Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta.
  • In a skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes.
  • Add the chopped onion to the skillet and sauté for another 3-4 minutes until the onion is translucent. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Pour in the heavy cream and bring to a simmer. Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is smooth.
  • Combine the cooked penne pasta with the sauce and sausage mixture. If the sauce is too thick, gradually add some reserved pasta water to reach the desired consistency.
  • Season with salt and pepper to taste. Stir well to ensure the pasta is coated with the creamy sauce.
  • Serve immediately, garnished with chopped parsley.

Notes

For extra flavor, consider adding vegetables such as bell peppers or spinach to the dish.
If you prefer a bit of heat, add crushed red pepper flakes to the sausage while cooking.
This dish can be made ahead and reheated; just be sure to add a splash of cream or pasta water when reheating to keep it creamy.
