Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup, if desired.
Cut the salmon fillet into bite-sized pieces, about 1 inch cubes.
In a mixing bowl, combine the honey, soy sauce, minced garlic, minced ginger (if using), olive oil, black pepper, and salt. Mix well to create the honey garlic marinade.
Add the salmon pieces to the bowl and gently toss them in the marinade until they are well coated.
Place the marinated salmon bites on the prepared baking sheet, making sure they are spaced apart for even cooking.
Bake the salmon bites in the preheated oven for 12-15 minutes, or until the salmon is cooked through and slightly crispy on the outside.
Remove from the oven and garnish with sesame seeds and sliced green onions before serving.
For extra crunch, you can broil the salmon bites for the last 2 minutes of cooking. Keep an eye on them to prevent burning.
Serve with additional honey garlic sauce on the side for dipping or drizzling.
