Ingredients
  

  • 1 pound ground beef (or turkey) For a vegetarian option, substitute with plant-based ground meat or omit.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 packets taco seasoning About 3 tablespoons total; adjust spice level using mild or spicy seasoning.
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 can (15 ounces) tomato sauce
  • 2 cups beef broth
  • 8 ounces uncooked spaghetti Break into thirds before adding.
  • 1 cup shredded cheddar cheese Stir in until melted.
  • to taste salt and pepper
  • optional toppings sour cream, chopped cilantro, sliced jalapeños

Instructions
 

  • In a large mixing bowl, combine the ground beef, chopped onion, minced garlic, and taco seasoning. Mix until well combined.
  • Transfer the meat mixture into the crockpot, spreading it out evenly.
  • Add the black beans, diced tomatoes (with juices), tomato sauce, and beef broth to the crockpot. Stir everything together to combine.
  • Cover and cook on low for 4 hours.
  • After 4 hours, break the uncooked spaghetti into thirds and stir it into the crockpot. Ensure the pasta is submerged in the sauce.
  • Cover and cook for an additional 30 minutes on low, or until the spaghetti is cooked to your preference.
  • Once cooked, stir in the shredded cheddar cheese until melted and well incorporated. Season with salt and pepper to taste.
  • Serve hot with optional toppings like sour cream, cilantro, or jalapeños.

Notes

For a vegetarian option, substitute ground beef with plant-based ground meat or omit it entirely.
You can adjust the spice level by using mild or spicy taco seasoning.
If you prefer firmer spaghetti, you can reduce the cooking time after adding the pasta.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.
