Ingredients
  

  • 1 lb ground turkey or beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground turkey or beef until browned. Add the diced onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
  • Stir in the frozen mixed vegetables and cook for an additional 3 minutes.
  • In a mixing bowl, combine the dairy-free cream of mushroom soup, vegetable broth, garlic powder, onion powder, salt, and pepper. Mix well.
  • Add the soup mixture to the skillet and stir until everything is combined. Remove from heat.
  • Pour the meat and vegetable mixture into a 9x13 inch baking dish, spreading it out evenly.
  • Top the mixture with the frozen tater tots, arranging them in a single layer.
  • Bake in the preheated oven for 30 minutes, or until the tater tots are golden brown and crispy.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.

Notes

For added flavor, consider using different seasonings like paprika or a dash of hot sauce.
