- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 teaspoon garlic powder
- 1 teaspoon paprika

- 4 large flour tortillas
- 1 cup lettuce, shredded
- 1 medium tomato, diced
- ¼ cup mayonnaise optional

Heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion and bell pepper. Sauté for about 3-4 minutes until they soften.
Add the ground beef to the skillet. Break it apart with a spatula and cook for about 5-7 minutes until browned and fully cooked. Drain excess fat if necessary.
Sprinkle in the garlic powder, paprika, salt, and black pepper. Stir to combine and let it cook for an additional minute.
Reduce the heat to low and sprinkle the shredded cheddar cheese on top of the beef mixture. Cover the skillet for a couple of minutes until the cheese is melted.
While the cheese is melting, warm the flour tortillas in a separate pan or microwave for a few seconds until soft.
