Ingredients
  

  • 225 g all-purpose flour
  • 75 g unsalted butter, softened
  • 75 g caster sugar
  • 1 large egg
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • 1 zest lemon
  • ½ teaspoon vanilla extract
  • a pinch salt
  • optional colored sprinkles or edible decorations

Instructions
 

  • Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together the softened butter and caster sugar until it becomes light and fluffy.
  • Beat in the egg, vanilla extract, and lemon zest until well combined.
  • In a separate bowl, sift together the all-purpose flour, baking powder, cinnamon, ginger, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  • Turn the dough out onto a lightly floured surface and roll it out to approximately ¼ inch thickness.
  • Use cookie cutters to cut out shapes from the dough. If desired, sprinkle some colored sprinkles on top of each biscuit before baking.
  • Place the biscuits onto the prepared baking sheet, spacing them apart to allow for spreading.
  • Bake in the preheated oven for 10 minutes or until the edges are golden.
  • Remove from the oven and let them cool on a wire rack before serving.

Notes

These biscuits can be stored in an airtight container for up to a week.
