Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
In a mixing bowl, cream together the softened butter and caster sugar until it becomes light and fluffy.
Beat in the egg, vanilla extract, and lemon zest until well combined.
In a separate bowl, sift together the all-purpose flour, baking powder, cinnamon, ginger, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
Turn the dough out onto a lightly floured surface and roll it out to approximately ¼ inch thickness.
Use cookie cutters to cut out shapes from the dough. If desired, sprinkle some colored sprinkles on top of each biscuit before baking.
Place the biscuits onto the prepared baking sheet, spacing them apart to allow for spreading.
Bake in the preheated oven for 10 minutes or until the edges are golden.
Remove from the oven and let them cool on a wire rack before serving.
