Equipment

  • 1 large mixing bowl
  • 1 microwave-safe bowl
  • 1 baking sheet
  • 1 parchment paper optional
  • 1 spatula or spoon
  • 1 set measuring cups and spoons

Ingredients

  • 9 cups rice cereal
  • 1 cup semi-sweet chocolate chips
  • ½ cup creamy peanut butter
  • ¼ cup unsalted butter
  • 2 cups powdered sugar
  • 1 cup pastel M&M's or candy-coated chocolate eggs
  • ½ teaspoon vanilla extract

Instructions

  • Prepare your workspace by lining a baking sheet with parchment paper to make cleanup easier, if desired.
  • In a microwave-safe bowl, combine the semi-sweet chocolate chips, peanut butter, and unsalted butter. Microwave in 30-second intervals, stirring between each until fully melted and smooth.
  • Stir in the vanilla extract once the mixture is melted and take it out of the microwave.
  • In a large mixing bowl, pour the rice cereal. Pour the melted chocolate mixture over the cereal. Gently stir until all the cereal is coated evenly.
  • Once combined, add the powdered sugar to the bowl. Mix thoroughly until the cereal is coated in powdered sugar.
  • Gently fold in the pastel M&M's or candy-coated chocolate eggs for festive color and crunch.
  • Spread the mixture out evenly on the lined baking sheet, allowing it to cool and set for about 10 minutes.
  • Once cooled, break the mixture into clusters and serve. Store leftovers in an airtight container.

Notes

For a different flavor, try using white chocolate or dark chocolate instead of semi-sweet.
Feel free to customize with different mix-ins, such as nuts, dried fruit, or other types of candy.
Make this treat ahead of time and store it in a cool, dry place to keep it fresh for your Easter celebrations.
