- 1 cup Crispy Chow Mein noodles
- ½ cup shredded coconut
- ½ cup mini chocolate eggs or jelly bean candies
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract

Line a baking sheet with parchment paper and set it aside.
In a saucepan, melt the semi-sweet chocolate chips and vegetable oil over low heat, stirring continuously until smooth.
Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.
Add the Crispy Chow Mein noodles and shredded coconut to the melted chocolate, and gently fold them in until fully coated.
Using a spoon, scoop a heaping tablespoon of the mixture and place it on the prepared baking sheet. Use your fingers to create a small indentation in the center to form a nest shape.
Repeat with the remaining mixture, spacing the cookies about 2 inches apart.
