Ingredients
  

  • 1 pound ground breakfast sausage
  • ¼ cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (16.3 ounces) refrigerated biscuits (8 biscuits)
  • 1 cup shredded cheddar cheese
  • 2 large eggs

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a spatula as it cooks. Drain any excess fat.
  • Sprinkle the flour over the cooked sausage and stir to combine. Gradually add the milk while stirring continuously until the mixture thickens. Season with salt and black pepper. Remove from heat.
  • In a mixing bowl, whisk together the eggs. Set aside.
  • Cut the refrigerated biscuits into quarters and arrange them evenly in the bottom of the greased 9x13-inch baking dish.
  • Pour the sausage gravy over the biscuit pieces, spreading it evenly. Then, pour the whisked eggs on top of the gravy.
  • Sprinkle the shredded cheddar cheese over the casserole evenly.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the biscuits are cooked through.
  • Allow the casserole to cool for a few minutes before serving.

Notes

You can substitute turkey sausage for a lighter option.
Feel free to add diced vegetables such as bell peppers or onions for extra flavor and nutrition.
This casserole can be prepared the night before and stored in the refrigerator. Just add some extra baking time when cooking from cold.
