Ingredients
  

  • 8 pieces lamb chops about 1 inch thick
  • ¼ cup olive oil
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped (or 1 tablespoon dried)
  • 2 tablespoons fresh thyme chopped (or 1 tablespoon dried)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 piece lemon Juice of 1

Instructions
 

  • In a mixing bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, pepper, and lemon juice. Whisk the ingredients together until well combined.
  • Place the lamb chops in a large resealable plastic bag or a shallow dish. Pour the marinade over the chops, ensuring they are evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to overnight for more flavor).
  • Preheat your grill or grill pan over medium-high heat.
  • Remove the lamb chops from the marinade and let any excess liquid drip off. Discard the marinade.
  • Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness. (If using a meat thermometer, aim for an internal temperature of 145°F for medium-rare.)
  • Once cooked, remove the chops from the grill and let them rest for about 5 minutes before serving. This allows the juices to redistribute and keeps the meat tender.
  • Serve the lamb chops warm, garnished with additional fresh herbs if desired.

Notes

Feel free to adjust the herbs based on your preference. Mint or parsley can also be great additions.
Pair these lamb chops with a side of roasted vegetables or a fresh salad for a complete meal.
For an extra punch of flavor, you can add a teaspoon of red pepper flakes to the marinade for some heat.
