- 1 cup uncooked white rice
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 medium onion, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook for about 3-5 minutes until softened.
