  • 3 large eggs
  • 2 tablespoons coconut flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set it aside.
  • In a mixing bowl, combine the cottage cheese and eggs. Whisk together until smooth and well combined. If you prefer a finer texture, blend the mixture using an electric mixer or food processor.
  • In a separate bowl, mix the coconut flour, baking powder, and salt. Gradually add this dry mixture to the cottage cheese and egg mixture, stirring until fully incorporated.
  • If desired, add any herbs or spices to enhance the flavor, mixing well.
  • Using a spoon or a cookie cutter, place dollops or disks of the mixture onto the prepared baking sheet, leaving space between each piece.
  • Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the bread is cooked through.
  • Remove from the oven and let them cool slightly before serving.

Notes
