Ingredients
  

  • 1 pound boneless, skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 pound potato gnocchi Can be store-bought or homemade.
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste pepper
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped For garnish.

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink.
  • Add the minced garlic and chopped onion to the skillet, and sauté for an additional 2-3 minutes until the onion is translucent.
  • While the chicken is cooking, bring a separate pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes. Drain and set aside.
  • Once the chicken and onions are cooked, add the heavy cream and Italian seasoning to the skillet. Stir to combine and let the mixture simmer for about 2 minutes.
  • Add the gnocchi to the skillet along with the fresh spinach and half of the Parmesan cheese. Gently toss everything together, allowing the spinach to wilt and the gnocchi to heat through.
  • Taste and adjust seasoning with additional salt and pepper, if needed.
  • Remove from heat and sprinkle the remaining Parmesan cheese on top. Garnish with fresh parsley before serving.

Notes

For added flavor, you can include sun-dried tomatoes or artichoke hearts.
This dish can be made with store-bought or homemade gnocchi.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
