Ingredients
  

  • 1 lb boneless, skinless chicken breasts
  • ¼ cup olive oil
  • ¼ cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 unit lemon, juice of

Instructions
 

  • Cut the chicken breasts into bite-sized pieces, approximately 1-inch cubes.
  • In a mixing bowl, whisk together the olive oil, Parmesan cheese, minced garlic, Italian seasoning, salt, pepper, and lemon juice until well combined.
  • Add the chicken pieces to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 15 minutes, or up to 2 hours for more flavor.
  • Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for about 10 minutes to prevent burning.
  • Thread the marinated chicken pieces onto the skewers, leaving a small amount of space between each piece for even cooking.
  • Once the grill is hot, place the skewers on the grill. Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  • If baking, preheat your oven to 400°F (200°C) and place the skewers on a baking sheet. Bake for 20-25 minutes, turning halfway through.
  • Once cooked, remove the skewers from the grill or oven and let them rest for a few minutes.
  • Garnish with chopped fresh parsley before serving.

Notes

Feel free to add vegetables like bell peppers or zucchini to the skewers for added flavor and nutrition.
These skewers can be served with a dipping sauce such as marinara or ranch dressing for an extra kick.
