Ingredients
  

  • 1 pound ground turkey
  • 3 medium sweet potatoes About 1.5 pounds.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup bell pepper, diced
  • 1 cup corn Frozen or canned.
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt and pepper
  • 1 tablespoon olive oil
  • ½ cup shredded cheese Cheddar or your choice.
  • to garnish fresh parsley Optional.

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Peel and dice the sweet potatoes into small cubes. Boil them in a pot of salted water for about 10-12 minutes, or until tender. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  • Stir in the minced garlic and bell pepper, cooking for an additional 2-3 minutes until softened.
  • Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  • Stir in the corn, cooked sweet potatoes, cumin, smoked paprika, salt, and pepper. Mix well.
  • Transfer the turkey mixture to a greased baking dish and top with shredded cheese.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired.

Notes

You can customize this casserole by adding your favorite vegetables or spices.
For a spicier flavor, consider adding chopped jalapeños or red pepper flakes.
Leftovers can be stored in the refrigerator for up to three days or frozen for later use.
