Preheat your oven to 375°F (190°C).
Peel and dice the sweet potatoes into small cubes. Boil them in a pot of salted water for about 10-12 minutes, or until tender. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
Stir in the minced garlic and bell pepper, cooking for an additional 2-3 minutes until softened.
Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
Stir in the corn, cooked sweet potatoes, cumin, smoked paprika, salt, and pepper. Mix well.
Transfer the turkey mixture to a greased baking dish and top with shredded cheese.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired.
