  • 12 oz whole wheat penne pasta hearty
  • 1 tablespoon olive oil for flavor
  • 1 lb lean ground beef for protein
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup corn kernels
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can diced tomatoes 14.5 oz
  • ½ teaspoon chili powder
  • ½ teaspoon ground cumin
  • salt and pepper to taste
  • ½ cup shredded cheddar cheese
  • 2 tablespoon chopped fresh cilantro optional

  • Cook the pasta according to package instructions, drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned.
  • Add diced onion, minced garlic, and diced red bell pepper. Cook for about 5 minutes until softened.
  • Stir in corn, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
  • Add the cooked pasta to the skillet and stir well to combine.
  • Sprinkle shredded cheddar cheese over the pasta and allow to melt.
  • Garnish with chopped cilantro if desired. Serve warm.

Notes

Cook pasta just to al dente and use canned ingredients to speed up prep. For leftovers, portion and refrigerate or freeze in airtight containers.
