Ingredients
  

  • 1 pound baby carrots
  • 3 tablespoons honey
  • 2 tablespoons unsalted butter
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley Optional, for garnish.

Instructions
 

  • Rinse the baby carrots under cold water to remove any dirt.
  • In a medium saucepan, bring about 2 cups of water to a boil. Add the baby carrots and cook for 5 minutes until they are just fork-tender.
  • Drain the carrots and return them to the saucepan.
  • Add the butter, honey, salt, and black pepper to the saucepan with the carrots.
  • Cook the mixture over medium heat, stirring frequently for about 5-7 minutes, until the carrots are well coated and the honey and butter have formed a glaze.
  • Remove from heat and transfer the glazed carrots to a serving dish.
  • If desired, garnish with chopped fresh parsley before serving.

Notes

For a variation, you can add a pinch of cinnamon or ginger for an extra layer of flavor.
This dish pairs wonderfully with roasted meats or as part of a vegetarian meal.
