Ingredients
  

  • 4 fillets salmon 6 oz each
  • 1 cup fresh pineapple chunks
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 tablespoon lime juice
  • to taste fresh cilantro leaves for garnish Optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the honey, soy sauce, olive oil, minced garlic, grated ginger, black pepper, salt, and lime juice. Whisk together until well combined.
  • Place the salmon fillets in a baking dish and pour half of the honey mixture over the salmon, making sure each fillet is well coated.
  • Scatter the pineapple chunks around the salmon in the baking dish.
  • Using a basting brush, brush the remaining honey mixture over the tops of the salmon fillets and pineapple.
  • Bake in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Remove from the oven and garnish the dish with fresh cilantro leaves if desired.
  • Serve hot with the baked pineapple and your choice of side dish.

Notes

For a bit of heat, you can add red pepper flakes to the honey mixture.
If fresh pineapple is not available, canned pineapple chunks can be used as an alternative.
This dish can also be grilled for a smoky flavor; just adjust the cooking time accordingly.
