Ingredients
  

  • 1 pound carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
  • Optional Fresh parsley for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper for easy cleanup, if desired.
  • In a mixing bowl, whisk together the honey, olive oil, salt, pepper, and thyme until well combined.
  • Add the cut carrots to the bowl and toss them in the honey mixture until they are evenly coated.
  • Spread the coated carrots in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
  • Once done, remove from the oven and let cool for a few minutes. Optionally, garnish with fresh parsley before serving.

Notes

For added flavor, you can sprinkle some crushed garlic or sprinkle chili flakes before roasting.
Ensure that the carrots are cut into uniform pieces for even cooking.
This dish pairs well with roasted meats and can be served warm or at room temperature.
