1 salad serving bowl
- 4 cups fresh broccoli florets
- 2 medium Honeycrisp apples, cored and diced About 2 cups
- 1 cup shredded carrots
- ½ cup red onion, thinly sliced
- ½ cup Greek yogurt Can substitute with sour cream.
- ¼ cup mayonnaise
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- ½ cup walnuts or pecans, chopped and toasted For added crunch.
- to taste salt and pepper
Wash the broccoli florets and chop them into bite-sized pieces. Place them in a large mixing bowl.
Dice the Honeycrisp apples and add them to the bowl with the broccoli.
Shred the carrots and slice the red onion thinly before adding them to the mixing bowl as well.
In a separate bowl, whisk together the Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth. Season with salt and pepper to taste.
Pour the dressing over the salad ingredients in the large bowl and toss gently to combine, ensuring everything is evenly coated.
Just before serving, sprinkle the toasted walnuts or pecans over the salad for added crunch.
Serve immediately in a salad serving bowl or refrigerate for up to an hour to allow the flavors to meld.
You can substitute Greek yogurt with sour cream for a different flavor. Feel free to add ingredients like raisins or cranberries for extra sweetness. This salad can be made a few hours ahead of time but serve the nuts separately until just before serving to maintain their crunch.
