Ingredients
  

  • 4 cups fresh broccoli florets
  • 2 medium Honeycrisp apples, cored and diced About 2 cups
  • 1 cup shredded carrots
  • ½ cup red onion, thinly sliced
  • ½ cup Greek yogurt Can substitute with sour cream.
  • ¼ cup mayonnaise
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • ½ cup walnuts or pecans, chopped and toasted For added crunch.

Instructions
 

  • Wash the broccoli florets and chop them into bite-sized pieces. Place them in a large mixing bowl.
  • Dice the Honeycrisp apples and add them to the bowl with the broccoli.
  • Shred the carrots and slice the red onion thinly before adding them to the mixing bowl as well.
  • In a separate bowl, whisk together the Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth. Season with salt and pepper to taste.
  • Pour the dressing over the salad ingredients in the large bowl and toss gently to combine, ensuring everything is evenly coated.
  • Just before serving, sprinkle the toasted walnuts or pecans over the salad for added crunch.
  • Serve immediately in a salad serving bowl or refrigerate for up to an hour to allow the flavors to meld.

Notes

You can substitute Greek yogurt with sour cream for a different flavor.
Feel free to add ingredients like raisins or cranberries for extra sweetness.
This salad can be made a few hours ahead of time but serve the nuts separately until just before serving to maintain their crunch.
