Ingredients
  

  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • ¼ cup hot honey Or regular honey mixed with hot sauce.
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • salt and pepper To taste.
  • 2 cups cooked rice White or brown.
  • 2 cups mixed vegetables Bell peppers, broccoli, carrots.
  • 1 green onion, sliced For garnish.
  • sesame seeds For garnish.

Instructions
 

  • Start by cooking the rice according to package instructions. Set aside when done.
  • In a large mixing bowl, combine diced chicken, olive oil, hot honey, soy sauce, garlic powder, paprika, salt, and pepper. Mix well to ensure chicken is evenly coated.
  • Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet in a single layer. Cook for about 7-10 minutes, stirring occasionally, until the chicken is cooked through and lightly caramelized.
  • In the same skillet, add the mixed vegetables. Sauté for another 5-7 minutes, until the vegetables are tender but still crisp.
  • To serve, place a scoop of rice in a bowl, top with the hot honey chicken and sautéed vegetables.
  • Garnish with sliced green onions and sesame seeds.
  • Adjust the amount of hot honey according to your spice preference if desired.
  • For a refreshing touch, you can add avocado slices or fresh cilantro as a garnish.
