Heat a large skillet over medium-high heat. Add the marinated chicken to the skillet in a single layer. Cook for about 7-10 minutes, stirring occasionally, until the chicken is cooked through and lightly caramelized.
In the same skillet, add the mixed vegetables. Sauté for another 5-7 minutes, until the vegetables are tender but still crisp.
To serve, place a scoop of rice in a bowl, top with the hot honey chicken and sautéed vegetables.
Garnish with sliced green onions and sesame seeds.
Adjust the amount of hot honey according to your spice preference if desired.
