  • 2 large eggs beaten until smooth
  • 3 oz superfine or baker's sugar not powdered
  • 2 oz brandy
  • 2 oz spiced rum Sailor Jerry’s recommended
  • 6 oz whole milk
  • 4 oz heavy cream
  • whole nutmeg cloves for fresh grating

  • Crack the eggs into a medium mixing bowl and beat them thoroughly until smooth, no lumps.
  • Add the superfine sugar bit by bit while you whisk until the mix looks light and frothy.
  • Slowly stir in the brandy and spiced rum, mixing thoroughly.
  • Pour in the whole milk and heavy cream while whisking until smooth and homogenous.
  • Transfer the mixture into a pitcher or glasses for serving.
  • Grate fresh nutmeg on top of each serving.
  • Serve chilled or over ice if preferred.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Stir before serving again. Don’t freeze as the texture may break.
