- 4 pieces cod fillets About 6 ounces each.
- ½ cup unsalted butter 1 stick.
- 2 lemons One for juice, one for slices.
- 4 cloves garlic Minced.
- to taste Salt
- to taste Black pepper
- 1 tablespoon fresh parsley Chopped, for garnish.
Preheat your oven to 400°F (200°C).
In a medium mixing bowl, melt the butter in the microwave or on the stove. Once melted, add the juice of one lemon and minced garlic. Whisk together until combined.
Place the cod fillets in a baking dish. Season each fillet with salt and black pepper.
Pour the lemon butter mixture over the cod fillets, ensuring they are evenly coated.
Thinly slice the remaining lemon and arrange the slices on top of the cod for added flavor and presentation.
Cover the baking dish with aluminum foil or parchment paper to keep the moisture in.
Bake in the preheated oven for 15 minutes, then remove the cover and bake for an additional 5 minutes, or until the cod flakes easily with a fork.
Once cooked, remove from the oven and garnish with fresh parsley before serving.
Feel free to substitute cod with other white fish such as haddock or tilapia. Serve with a side of steamed vegetables or a fresh salad for a complete meal. For a little extra flavor, consider adding a pinch of red pepper flakes to the butter mixture for heat.
