Ingredients
  

  • 4 pieces cod fillets About 6 ounces each.
  • ½ cup unsalted butter 1 stick.
  • 2 lemons One for juice, one for slices.
  • 4 cloves garlic Minced.
  • to taste Salt
  • to taste Black pepper
  • 1 tablespoon fresh parsley Chopped, for garnish.

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a medium mixing bowl, melt the butter in the microwave or on the stove. Once melted, add the juice of one lemon and minced garlic. Whisk together until combined.
  • Place the cod fillets in a baking dish. Season each fillet with salt and black pepper.
  • Pour the lemon butter mixture over the cod fillets, ensuring they are evenly coated.
  • Thinly slice the remaining lemon and arrange the slices on top of the cod for added flavor and presentation.
  • Cover the baking dish with aluminum foil or parchment paper to keep the moisture in.
  • Bake in the preheated oven for 15 minutes, then remove the cover and bake for an additional 5 minutes, or until the cod flakes easily with a fork.
  • Once cooked, remove from the oven and garnish with fresh parsley before serving.

Notes

Feel free to substitute cod with other white fish such as haddock or tilapia.
Serve with a side of steamed vegetables or a fresh salad for a complete meal.
For a little extra flavor, consider adding a pinch of red pepper flakes to the butter mixture for heat.
