In a separate mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
Gradually add granulated sugar and mix until well combined.
Add the eggs, lemon juice, lemon zest, vanilla extract, and salt. Mix until smooth and fully incorporated.
Pour the cream cheese mixture over the baked crust and spread evenly.
Bake the bars in the oven for an additional 20-25 minutes, or until the filling is set and slightly golden at the edges.
Remove from the oven and allow to cool to room temperature. For best results, refrigerate for at least 2 hours before cutting into squares.
For added flavor, you can top the bars with a dusting of powdered sugar before serving.
These bars can be stored in the refrigerator for up to one week.
