Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds total.
  • ¼ cup olive oil
  • ¼ cup fresh lemon juice About 2 large lemons.
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • zest of 1 lemon
  • to taste fresh parsley, chopped for garnish

Instructions
 

  • In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, and lemon zest until well combined.
  • Place the chicken breasts in a baking dish and pour the marinade over them, ensuring all pieces are well coated. Marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).
  • Preheat your oven to 400°F (200°C).
  • After marinating, arrange the chicken breasts in a single layer in the baking dish. Discard any remaining marinade.
  • Bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is no longer pink in the center.
  • Once cooked, remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

Serve with steamed vegetables, rice, or a fresh salad for a complete meal.
You can substitute chicken thighs or legs for a different texture and flavor.
Adjust the amount of garlic to your preference; less garlic can be used if desired.
