Ingredients
  

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and black pepper. Whisk until well mixed.
  • Add the chicken pieces to the bowl, tossing them to ensure they are evenly coated in the marinade. Let them marinate for at least 10 minutes, or up to 1 hour in the refrigerator for more flavor.
  • Line a baking sheet with parchment paper or aluminum foil for easy clean-up. Spread the marinated chicken bits in a single layer on the baking sheet.
  • Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and slightly golden around the edges. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
  • Remove from the oven and let the chicken rest for a few minutes. Garnish with chopped parsley before serving.
  • For added flavor, consider drizzling a bit more lemon juice over the chicken just before serving.
  • Serve with a side of steamed vegetables or over a bed of rice for a complete meal.
