- 8 pieces pocket-style tortillas About 6 inches in diameter.
- 2 cups ground beef or chicken
- 1 teaspoon taco seasoning
- 1 cup shredded cheese Cheddar or Mexican blend.
- 1 cup refried beans
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- ½ cup sour cream
- ½ cup salsa
- 2 tablespoons olive oil

Heat the olive oil in a frying pan over medium heat. Add the ground beef or chicken and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Sprinkle the taco seasoning over the meat and cook for an additional 2 minutes until fully coated and fragrant. Season with salt and pepper to taste.
In a mixing bowl, combine the cooked meat with the refried beans and half of the shredded cheese. Stir until well mixed.
Take a pocket-style tortilla and place a generous amount of the meat and bean mixture inside. Sprinkle a little more cheese on top of the filling.
Carefully fold the tortilla over to enclose the filling, creating a pocket. Repeat this process for all tortillas.
Wipe the frying pan clean and return it to medium heat. Place the filled tortillas in the pan and cook for about 2-3 minutes on each side, until the cheese is melted and the tortillas are golden brown.
Once cooked, remove the tacos from the pan and let them rest for a minute. Serve them with diced tomatoes, shredded lettuce, sour cream, and salsa on the side for topping.
