Preheat your oven to 400°F (200°C).
In a shallow bowl, whisk together the eggs until well beaten. Set aside.
In another shallow bowl, combine the grated Parmesan cheese, bread crumbs, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly.
Take each chicken breast, dip it first in the egg mixture to coat it, and then dredge it in the Parmesan-bread crumb mixture, pressing gently to adhere the coating. Place the coated chicken breasts in a baking dish.
For a golden crust, brush the tops of the coated chicken breasts with olive oil or spray lightly with cooking spray.
Bake in the preheated oven for approximately 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Once done, remove from the oven and let the chicken rest for a few minutes. Garnish with chopped fresh parsley if desired.
Serve hot, paired with your favorite sides like steamed vegetables, rice, or salad.
