- 2 cans chickpeas 15 oz each, drained and rinsed.
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon red pepper flakes Adjust to taste.
- to taste salt
- to taste pepper
- 1 cup vegetable broth
- 1 tablespoon lemon juice
- ½ cup fresh parsley, chopped For garnish.
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic, ground cumin, smoked paprika, red pepper flakes, salt, and pepper. Sauté for another 1-2 minutes until fragrant.
Add the drained chickpeas to the skillet and mix well to coat them with the spice mixture.
Pour in the vegetable broth and bring to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld and the chickpeas to absorb the broth.
Stir in the lemon juice and mix well.
Remove from heat, garnish with fresh parsley, and serve hot.
For added texture and flavor, consider garnishing with crumbled feta cheese or toasted pine nuts. Serve it with rice, quinoa, or crusty bread to soak up the delicious sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
